Roquette arugula has purple stems and dark-green leaves.

Arugula seeds are easy to grow, and they’re a staple of microgreen growers. However, the peppery taste gets less intense as it grows larger; it’s best to harvest when the first true leaves form.

Days to maturity are around 14 days when harvested when the first true leaf forms, instead of harvesting at the cotyledon stage.
