A relative of onion and garlic, American Flag Leeks have an onion taste and will add color and flavor to any micro-salad or egg dish.
They have a powerful scent and a flavor similar to mature leeks.
The finished microgreen is a long, slender green similar to miniature chives. Micro-leeks are often used as an onion substitute many dishes — fantastic on hamburgers, soups, as garnishes, and more.
A small crop goes a long way, as the onion flavor can over-power a dish if used too heavily.
Harvest leek microgreens when they reach a height of 2 1/2- to 4-inches.
The thin green stem will more than not have the remains of the black seed resting at the tip. The seed pod isn’t much of an issue when cooking. If it bothers you, they can be rinsed off with running water.
Leeks are ready to harvest between 12 and 15 days after sowing.
