Upland Cress Seed Highlights

Upland Cress is similar to Water Cress but has a more intense peppery flavor. Again, just a tiny bit of upland cress adds a punch of flavor.

Grow Upland Cress as a microgreen or to the baby salad stage. However, Upland Cress leaves don’t get very large, so instead, wait for the first true leaves to form (as shown in the close-up photo above.

The older the leaves get, the more potent the flavor. So test the taste as it grows to find your favorite growth stage.

Upland Cress is edible in raw and cooked applications such as steaming or sautéing. When used fresh, the leaves can be tossed into salads, placed on sandwiches and wraps, mixed with pasta, or add it as a garnish.

Cress can be mixed into soups, blended into sauces, or lightly sautéed and served alongside cooked meats. Upland cress pairs well with meats such as fish, poultry, ham, smoked turkey, avocado, apples, cucumbers, onions, garlic, and Greek yogurt.

Upland Cress seed is mucilaginous, meaning it develops a jelly-like coating when wet.

Try to harvest the Cress cleanly; it doesn’t store well after being washed. Best if you wash it just before using it.

These are my recommended seeding densities to produce a great-looking tray of Upland Cress microgreens.

I like to allow microgreen leaves to develop to a larger size as they provide more nutrition & flavor than producing smaller leaves and stems.

Microgreen density depends on many environmental factors and seed germination percentages.

You may prefer to modify the seeding density, but my seeding densities are a great starting point if nothing else.
