Shungiku is Japanese for springtime or spring and the name comes from this early-blooming flower. That’s right, Shungiku can also grow into garden flowers.
Shungiku, more commonly called Three Color Daisy, Tri-color Daisy, or Edible Chrysanthemum is one of the more interesting microgreens to grow.
The leaves are beautiful and the flavor is similar to carrots.
Edible Chrysanthemum microgreens can be eaten in the cotyledon stage or wait until the first true leaves form. In fact, this microgreen will grow a long time in a tray and still have great flavor. We have grown it as long as 45-days in the same tray.
These microgreens are great in salads and as a garnish because of the attractive leaves. The flavor will hold up to stronger flavors and can be used in stir-fries, meat dishes, in sushi, and California rolls, and added to soups after they have been served.
