Buckwheat seed needs to be soaked before planting, ideally a day ahead of time. After that they grow well using the weighted blackout method.

They’re crisp, juicy, and tangy making them a great addition to any microgreen salad or sandwich topping.

The leaves are a dark green and the stems are pink to rose in color. The leaves on buckwheat microgreens are larger than most microgreens, so overplanting is discouraged.

Buckwheat seed husks mostly fall off as the leaves emerge. Buckwheat microgreens should be harvested right after the cotyledons develop for a more tender microgreen.

Be sure to remove any remaining buckwheat seed husks as they are hard.

They are an excellent choice as a base for any microgreens salad or just added to salads. Because of their crisp texture, they’re also a tremendous raw topping for sandwiches or burgers.

Buckwheat seed can also be planted in garden beds as they are a great cover crop. Chop down the stalks when the buckwheat flowers emerge and leave the clippings on the garden bed.
