Shungiku is Japanese for springtime or spring, and the name comes from this early-blooming flower. That’s right, Shungiku can also grow into garden flowers.

Shungiku, called Three Color Daisy, Tri-color Daisy, or Edible Chrysanthemum, is one of the more exciting microgreens to grow.

The leaves are beautiful, and the flavor is similar to carrots.

Edible Chrysanthemum microgreens can be eaten in the cotyledon stage or wait until the first true leaves form. This microgreen will grow a long time in a tray and still have great flavor. We have grown it for as long as 45 days in the same tray.

These microgreens are great in salads and garnish because of the attractive leaves. The flavor will hold up to stronger flavors and can be used in stir-fries, meat dishes, sushi, and California rolls and added to soups after they have been served.

I use these vertical-sided measuring spoons because the seeds are easier to level with the straight sides.

These are my recommended seeding densities to produce a great-looking tray of Shungiku or 3 Colored Daisy microgreens.

I like to allow microgreen leaves to develop to a larger size as they provide more nutrition & flavor than producing smaller leaves and stems.

Microgreen density depends on many environmental factors and seed germination percentages.

You may prefer to modify the seeding density, but my seeding densities are a great starting point, if nothing else.
