Arugula is an herb from the mustard family, and its leaves have a pepper mustard-like flavor. They are high in vitamins A and C and are a good source of iron.

Roquette arugula has purple stems and dark-green leaves.

Arugula seeds are easy to grow and are a staple of microgreen growers. However, the peppery taste gets less intense as it grows larger; it’s best to harvest when the first true leaves form.

Days to maturity are around 14 days when harvested when the first true leaf forms, instead of harvesting at the cotyledon stage.

I use these vertical-sided measuring spoons because the seeds are easier to level with the straight sides.

These are my recommended seeding densities to produce a great-looking tray of organic Arugula microgreens.

I like to allow microgreen leaves to develop to a larger size as they provide more nutrition & flavor than producing smaller leaves and stems.

Microgreen density depends on many environmental factors and seed germination percentages.

You may prefer to modify the seeding density, but my seeding densities are a great starting point if nothing else.
