Harvesting Microgreens is a Very Simple Process
If you are going to use the microgreens straight away, then I would recommend using a pair of stainless steel scissors.
It is easier, quicker, and safer.
That is also the best way to maximize the nutrition available in these nutrient dense power-packed plants.
For longer storage, scissors leave a jagged cut creating more surface area across the stem which will oxidize quick and reduce how long the microgreens will store.
A very sharp knife works best if you plan on storing your microgreens in the refrigerator longer than a couple of day.
I recommend a harvest knife as the thin sharp blade makes a very clean cut and it is easy to keep razor sharp.
