Sunflower sprouts or microgreens have a nutty flavor and a crunchy texture and are nothing short of awesome in sandwiches, soups, salads, scrambled eggs, and wraps.
Both the leaves and the stems are edible. In my opinion, sunflower shoots are the finest of all the microgreens.
They’re a good source of healthy fats, fiber, protein, and iron, but they are a concentrated source of calories. They’re also high in fiber and contain a wide range of other vitamins and minerals including Vitamin A, B Vitamins, C, D, and E. Plus calcium, iron, magnesium, potassium, phosphorus, and trace amounts of zinc, copper, chromium, and manganese.
